Baja Fish Tacos

Ingredients

  • 12 oz. white flaky fish such as grouper or mahi-mahi
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • Dash cumin
  • 1 Tbsp. olive oil
  • 1/2 cup lowfat mayonnaise
  • 2 Tbsp. salsa
  • 8 (6-inch) corn tortillas
  • 2 cups shredded lettuce
  • 1 medium tomato, chopped

Directions

  1. Sprinkle fish with salt, pepper and cumin. Heat oil over medium heat in nonstick skillet.

  2. Add fish to skillet, cook about 5 minutes per side, until fish flakes easily with a fork.

  3. Meanwhile, mix mayonnaise and salsa in small bowl. Warm tortillas per package directions.

  4. Let dish cool slightly; chop into small pieces. Divide fish evenly among tortillas; top with lettuce and tomato. Drizzle witrh mayonnaise mixture.
