Salmon Self Crusting Quiche

Nice to serve hot, or cold to maybe take on a picnic
If preferred, the diced potato can be substituted with other vegetables of your choice

Prep time: 15 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients

  • 4 eggs, lightly beaten
  • 1 cup milk
  • 1 packet cheese sauce mix
  • 1 t chicken stock powder
  • 1/2 C flour
  • 1/2 t baking powder
  • 1/4 C bran flakes
  • 1 x 185 g tin salmon or tuna
  • 2 x potatoes, cooked and diced
  • 1 onion, finely chopped and sauteed 2 mins
  • 1/2 C grated cheese
  • plus 1/2 C grated cheese for topping

Directions

  1. Mix eggs, milk, cheese sauce mix, stock powder, flour, baking powder and bran together.

  2. Stir in remaining ingredients, except extra cheese for topping.

  3. Pour into a greased baking or casserole dish.

  4. Top with extra cheese.

  5. Bake at 180oC approx 30 minutes, until set and the top is golden.

  6. Stand a few minutes before serving.
