Salmon Self Crusting Quiche

Nice to serve hot, or cold to maybe take on a picnic
If preferred, the diced potato can be substituted with other vegetables of your choice
Prep time: 15 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients
- 4 eggs, lightly beaten
- 1 cup milk
- 1 packet cheese sauce mix
- 1 t chicken stock powder
- 1/2 C flour
- 1/2 t baking powder
- 1/4 C bran flakes
- 1 x 185 g tin salmon or tuna
- 2 x potatoes, cooked and diced
- 1 onion, finely chopped and sauteed 2 mins
- 1/2 C grated cheese
- plus 1/2 C grated cheese for topping
Directions

Mix eggs, milk, cheese sauce mix, stock powder, flour, baking powder and bran together.

Stir in remaining ingredients, except extra cheese for topping.

Pour into a greased baking or casserole dish.

Top with extra cheese.

Bake at 180oC approx 30 minutes, until set and the top is golden.

Stand a few minutes before serving.
