Baked Bananas

Ingredients

  • 4 large bananas
  • Butter
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/2 cup sherry
  • 3 Tbsp. rum
  • Variation:
  • 3 bananas, not fully ripe
  • 2 medium oranges, peeled
  • 1/3 cup granulated sugar
  • 1/4 cup butter, melted
  • 2 Tbsp. orange juice
  • 2 Tbsp. lemon juice
  • ice cream for serving, optional

Directions

  1. Place pineapple juice, brown sugar, spices, and sherry in saucepan. Heat and pour over bananas.

  2. Dot with butter and bake for about 15 minutes, basting often. Remove from oven; sprinkle with rum and serve at once.

  3. Variation:

  4. Peel and cut bananas in half lengthwise. Place halves in a shallow baking dish. Arrange orange sections over bananas and sprinkle with sugar.

  5. In a small bowl, combine melted butter and orange and lemon juice, pour over bananas. Bake at 450 degrees for 15 minutes. Cool slightly before serving with ice cream, if desired.
