Baked Beans with Sausage

Ingredients

  • beans1 lb. Italian sausage (hot or mild) or other sausage
  • 1/2 cup ketchup (optional)
  • 1/2 cup dark brown sugar (or more optional)
  • 1 tsp. garlic powder or crushed garlic
  • 1 tsp. chili powder (optional)
  • 1 tsp. instant coffee (optional)
  • 1 tsp. hot sauce (optional)
  • 1/2 cup liquid smoke (optional)
  • 12 oz. BBQ sauce (optional)
  • 1 medium or large onion, chopped
  • 1 green bell pepper, chopped
  • 2 large (28 oz.) cans or 5 small cans pork and beans, partially drained

Directions

  1. Squeeze sausage from casings (if applicable). Place in pan and break up with a spoon or spatula. Cook until sausage crumbles and bottom of pan is covered in rendered fat.

  2. Meanwhile, combine the remaining ingredients except onions, bell pepper and beans, and set aside.

  3. Remove sausage with a slotted spoon. Add onion and pepper to the pan and cook over medium heat until softened, 8 to 10 minutes.

  4. Using a slotted spoon to move onion/pepper mixture to a 9 × 13-inch baking dish. Stir in sausage, beans and mixed sauce. Combine thoroughly.

  5. Bake 1 hour then cool another half hour before serving.
