Ingredients
- 1 lb. dried pea beans
- Water for cooking
- 1/2 lb. salt pork, cut in 4 pieces
- 1/2 cup molasses
- 4 Tbsp. maple sugar
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. dry mustard
- 1 onion, peeled, sliced thin
- 1/4 cup brandy
Directions

place beans in a saucepan and add enough water to cover by 2 inches. Add salt pork and simmer slowly about 2 hours, or until al dente.

Add water as needed.

Drain, reserving liquid. In a measuring cup, combine molasses, salt dry mustard and maple sugar. Add enough liquid to measure 1 cup, then mix in soda. Stir mixture into beans along with sliced onions and brandy.

Bake in 2 quart bean pot for 1 1/2 to 2 hours in 325 degree oven.
