Poblano Guacamole

Ingredients

  • 2 poblano chiles
  • 3 avocados
  • 1/2 white onion, chopped
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped roasted red peppers
  • 2 limes, juiced
  • 1 tsp kosher salt

Directions

  1. Char poblanos over an open flame, turning. Let cool, then peel, seed and finely chop. Mash avocados; stir in the poblanos, onion, cilantro, red peppers, lime juice and salt.
