Ingredients
- 1/2 avocado
- 3 tbsp. olive oil
- 2 tbsp. water
- 1 lemon, juiced
- 1 garlic clove
- 1 tbsp. Dijon
- 1/4 tsp kosher salt
- Black pepper
- 2 romaine hearts, chopped
- 2 cups croutons
- 1 1/2 chopped avocados
- 1/4 cup grated Parmesan
Directions

Puree 1/2 avocado with olive oil, water, lemon juice, garlic, Dijon, salt and pepper in a blender until smooth. Toss with romaine, croutons, avocados and Parmesan. Season with salt and pepper.
