Avocado-Edamame Dip

Ingredients

  • 2 avocados
  • 2 cups cooked shelled edamame
  • 1/4 cup lemon juice
  • 2 tbsp. toasted sesame oil
  • 4 tsp soy sauce
  • 1 1/2 tsp kosher salt
  • 1/3 cup water
  • 1/2 cup chopped scallions
  • Shichimi Togarashi (Japanese spice mix)

Directions

  1. Puree avocados with edamame, lemon juice, sesame oil, soy sauce, and kosher salt in a food processor, adding water as needed to loosen. Stir in scallions. Sprinkle with Shichimi togarashi.
