Mexican Grilled Corn with Avocado

Ingredients

  • 1 avocado
  • 2 tbsp. mayo
  • 1 lime, juiced
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 6 grilled ears of corn
  • 1/2 cup crumbled Cotija cheese
  • Chili powder
  • Cilantro, chopped

Directions

  1. Pulse avocado, mayo, lime juice, cumin, and salt in a food processor. Spread on corn; roll in cheese. Sprinkle with chili powder and top with cilantro.
