Avocado Cheese Ball

Ingredients

  • 1 avocado
  • 8 oz. cream cheese
  • 1 tbsp. lime juice
  • 1/2 garlic clove, grated
  • 1 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 2 cups shredded Monterey Jack
  • 1 tbsp. finely chopped cilantro
  • 1 scallion, thinly sliced
  • Chili-flavored corn nuts

Directions

  1. Puree avocado, cream cheese, lime juice, garlic, salt and pepper in a food processor until smooth. Stir in cheese, cilantro and scallion. Form into a ball and coat with corn nuts. Refrigerate 2 hours.
