Baked Breaded Cauliflower

Ingredients
- 1 large head cauliflower
- 3 1/2 Tbsp. unsalted butter, divided use
- 6 green onions, minced
- 3 Tbsp. all-purpose flour
- 3/4 tsp. coarse salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. freshly grated nutmeg
- 2 cups half-and-half, at room temperature
- 1/2 cup PLUS 2 Tbsp. freshly grated parmesan cheese, divided use
- 1/3 cup moderately coarse dry bread crumbs

Meanwhile, prepare sauce: Melt 2 1/2 Tbsp. of the butter in heavy pan on low. Add green onions, cook, stirring 2 to 3 minutes or until limp. Blend in flour, salt, pepper and nutmeg, cook and stir 3 minutes.

Whisk constantly, add half-and-half in slow, steady stream; cook 5 to 8 minutes or until thickened. Add 1/2 cup cheese and stir until melted. Carefully pour sauce over cauliflower.

Melt the remaining tablespoon of butter. In a small bowl, combine the remaining 2 Tbsp. parmesan, the bread crumbs and the melted butter. Sprinkle over cauliflower. Bake uncovered 20 minutes or until lightly browned.
