Lasagna Soup

Very tasty and hearty dish.

Cook time: 15 minutes
Serves 12 people
Ingredients
- 1 lb. bulk Italian sausage
- 2 c onion, chopped
- 1 c carrot, diced
- 2 c mushrooms, sliced
- 2 T garlic, minced
- 4 c chicken broth
- 1 can Italian-style stewed tomatoes, chopped (14-1/2 oz.)
- 1 c mafalda pasta
- 2 c fresh spinach, chopped
- 1 c provolone or fresh mozzarella, diced
Directions

Brown sausage in large saucepan over medium-high heat.

Add onion and carrot; saute 3 minutes.

Stir in mushrooms and garlic and saute another 3 minutes.

Add broth and tomatoes, then bring to a boil.

Drop in pasta and simmer until cooked, about 10 minutes.

Stir in spinach and cook until wilted, about 1 minute.

Place 1/4 c diced cheese into each serving bowl and pour soup on top.

Garnish with grated Parmesan and basil if desired.

If you can’t find mafalda pasta, substitute canpenelle or penne pasta.
