Jicama Salad

Ingredients

  • 1 jicama
  • 4 radishes
  • 3 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 2 tsp agave syrup
  • 1/2 tsp salt
  • Pinch cayenne pepper
  • 1 scallion, sliced
  • 2 tbsp. chopped cilantro
  • 2 tbsp. chopped mint

Directions

  1. Peel jicama and cut into thin matchsticks. Cut radishes into matchsticks. Whisk olive oil, lemon juice, agave, kosher salt and cayenne in a large bowl. Add the jicama, radishes, scallion, cilantro and mint; toss. Season with salt.
