Baked Cauliflower Fritters

Ingredients
- vegetable oil
- 1 egg
- 1 Tbsp. milk OR half-and-half
- 1/4 cup freshly grated or shredded parmesan cheese
- 1/2 cup Italian-seasoned panko bread crumbs
- salt and ground black pepper, to taste
- 1/2 to 1 head cauliflower, separated into florets
Directions

Heat oven to 450 degrees. Coat a baking sheet with vegetable oil.

In a shallow dish, whisk together the egg and milk until mixture is frothy.

In a separate shallow dish combine cheese, panko. salt and pepper.

Dredge cauliflower florets in egg and then roll in the cheese mixture.

Arrange in a single layer on prepared baking sheet. Bake 15 minutes or until coating is crispy and cauliflower is tender. Serve immediately.
