Baked Chicken with Hot Mustard Sauce

Ingredients
- 1/3 cup evaporated milk
- 1 Tbsp. soy sauce
- 1 cup cornflake crumbs
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 broiler-fryer, about 3 lbs., cut up
- Hot Mustard Sauce:
- 1/4 cup prepared mustard
- 1 tsp. sugar
- 1/2 tsp. salt
- `/8 tsp. hot pepper sauce
- 1/2 cup evaporated milk
- 1 tsp. lemon juice

In a shallow bowl, mix evaporated milk and soy sauce. In another shallow bowl, mix cornflake crumbs, salt and pepper.

Grease a shallow baking pan. Dip chicken pieces in milk mixture, then roll in crumbs. Arrange in baking pan and bake in in-preheated 350 degree oven 1 hour, or until chicken is tender. Serve with sauce.

Hot Mustard Sauce:

Mix mustard, sugar and salt in saucepan. Stir in pepper sauce and evaporated milk. Heat, stirring until bubbly and heated through. Add lemon juice and serve with chicken.
