Baked Chicken and Rice Barbecue

Ingredients
- 1 Tbsp. salad oil
- 3 Lbs. chicken, cut in serving pieces
- 1/2 cup minced onion
- 1 cup ketchup
- 1/2 cup water
- 1/4 cup lemon juice
- 3 Tbsp. Worcestershire sauce
- 2 Tbsp. brown sugar
- 2 Tbsp. vinegar
- 1 tsp. prepared mustard
- 1/2 tsp. salt
- 3/4 cup raw, regular cooking rice

In large, heavy saucepan, heat oil. Add chicken; brown well, about 15 minutes. Remove chicken to a 10 × 6 × 2-inch baking dish.

Pour off all but 1 Tbsp. of fat from saucepan. Add onions; saute 5 minutes. Add remaining ingredients. Bring to boiling point. Pour over chicken.

Cover and bake in preheated moderate oven (350 degrees) 30 minutes. Uncover and bake 15 minutes longer.
