Ingredients
- 2 cups vegetable broth
- 1 bunch asparagus, trimmed and cut into 1/4-inch pieces
- 1 cup shelled fresh peas
- 2 cups dry couscous
- 1/2 cup chopped green onions
- 1 jalapeno, seeded and finely diced
- 1/2 tsp cumin
- Pinch cayenne pepper
- 3/4 tsp black pepper
- 2 tbsp. olive oil
- 2 tbsp. chopped fresh mint
- 1 tsp salt
Directions

Bring broth to a boil in a saucepan over high heat, then add asparagus and peas. Reduce heat to medium-low and simmer until asparagus is just tender, about 2 minutes, then remove from heat.

Meanwhile, stir together couscous, green onions, jalapeno, cumin, cayenne, 1/4 tsp black pepper and oil in a large bowl.

Stir couscous mixture into broth mixture, cover tightly, and let stand 10 minutes. Fluff with a fork, then stir in mint, salt, and remaining 1/2 tsp black pepper.
