Baked Chicken in Wine

Ingredients

  • 4 lb. chicken legs and thighs, skinned
  • 1 tsp. salt
  • 1/2 to 1 tsp. pepper
  • 1 tsp. paprika
  • 1/2 cup all-purpose flour
  • Vegetable oil
  • 2 medium onions, chopped
  • 2 medium green peppers, chopped
  • 1/2 cup slice fresh mushrooms
  • 2 (16 oz.) cans tomatoes, undrained and coarsely chopped
  • 1 tsp. ground thyme
  • 2 tsp. curry powder
  • 1/2 cup Chablis or other dry white wine
  • Hot cooked rice or noodles

Directions

  1. Sprinkle chicken with salt, pepper, and paprika; dredge in flour, and brown on all sides in hot oil. Drain chicken, and place in a 13 × 9 × 2-inch baking dish; reserve pan drippings.

  2. Add onion, green pepper, and mushrooms to pan drippings; saute until tender. Stir in tomatoes, thyme and curry powder; pour over chicken. Cover and bake at 35 0 degrees for 30 minutes. Add wine, and bake an additional 20m minutes. Serve over rice or noodles.
