Ingredients
- 1 tbsp. minced chipotle pepper in adobo sauce
- 2 garlic cloves, minced
- 2 tsp chili powder
- 1/8 tsp salt
- 2 tsp canola oil
- 2 15oz cans black beans, rinsed and drained
- 2 tbsp. water
- 1/2 cup pico de gallo salsa
- 6 flour tortillas, warmed
- 1 cup shredded cheddar
- 1/2 cup sour cream
- Additional pico de gallo salsa
Directions

In a skillet, sauce chipotle pepper, minced garlic, and seasonings in oil over medium heat 2 minutes. Stir in beans and water; bring to a boil. Reduce heat; simmer 5 minutes.

Mash coarsely; stir in salsa. Roll up tortillas with beans, cheese and sour cream; top with additional salsa.
