Cheddar Bean Burritos

Ingredients

  • 1 tbsp. minced chipotle pepper in adobo sauce
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1/8 tsp salt
  • 2 tsp canola oil
  • 2 15oz cans black beans, rinsed and drained
  • 2 tbsp. water
  • 1/2 cup pico de gallo salsa
  • 6 flour tortillas, warmed
  • 1 cup shredded cheddar
  • 1/2 cup sour cream
  • Additional pico de gallo salsa

Directions

  1. In a skillet, sauce chipotle pepper, minced garlic, and seasonings in oil over medium heat 2 minutes. Stir in beans and water; bring to a boil. Reduce heat; simmer 5 minutes.

  2. Mash coarsely; stir in salsa. Roll up tortillas with beans, cheese and sour cream; top with additional salsa.
