Baked Cod with Grapefruit

Ingredients
- 2 16 oz. pkg. frozen cod fillets, thawed
- 1 large grapefruit
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1 cup day-old bread crumbs
- 1/4 cup butter or margarine, melted
- 1/4 tsp. thyme leaves
Directions

Preheat oven to 350 degrees. Into small bowl, section grapefruit; let stand 5 minutes to collect juice. Brush cod fillet generously with juice from grapefruit; then sprinkle with salt and pepper. Place in 12 × 8 inch baking pan.

In small bowl, combine bread crumbs, 2 Tbsp. melted butter or margarine and thyme leaves; sprinkle over fish. Arrange grapefruit sections over bread crumbs; brush with remaining grapefruit sections over bread crumbs; brush with remaining melted butter or margarine. Bake 25 to 30 minutes or until fish flakes easily when tested with a fork.
