Baked Cod Piccata with Asparagus

Ingredients

  • 1 lb. fresh asparagus, trimmed
  • 1/4 cup water
  • 1 lb. cod fillet, cut into four pieces
  • 2 Tbsp. lemon juice
  • 1 tsp. salt-free lemon-pepper seasoning
  • 1/2 tsp. garlic powder
  • 2 Tbsp. butter, cubed
  • 2 tsp. capers
  • Minced fresh parsley, optional

Directions

  1. Place asparagus in an ungreased 11 × 7 inch baking dish, add water. Arrange cod over asparagus. Sprinkle with lemon juice, lemon-pepper and garlic powder. Dot with butter; sprinkle with capers.

  2. Bake, uncovered, at 400 degrees for 12 to 15 minutes or until fish flakes easily with a fork and asparagus is tender. If desired, top with parsley.
