Baked Cottage-Cheese Custard

Serves 6 people

Ingredients

  • 3 eggs
  • 2 cups reconstituted nonfat dry milk
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup small-curd creamed cottage cheese
  • Nutmeg
  • Preserves

Directions

  1. Beat eggs until blended. Add milk, sugar, salt, vanilla and cottage cheese. Mix well, then pour into shallow 1 1/2 quart baking dish. Sprinkle with nutmeg.

  2. Set baking dish in another pan and add 1 inch hot water to pan. Bake in preheated 350 degree oven 45 minutes, or until knife inserted in center comes out clean.

  3. Serve warm or chilled with a teaspoon of preserves on each serving.
