Baked Creamed Matchstick Potatoes

Ingredients
- 3 Tbsp. butter
- 4 potatoes, russet or Idaho
- 3 Tbsp. flour
- 2 1/4 tsp. dry mustard
- 1/2 tsp. paprika
- 1 3/4 cups half-and-half
- Salt and pepper to taste
- 2 cups Cheddar cheese, grated

Peel and wash potatoes, cut into thin slices; cut across slices to make matchstick pieces.

Cook potatoes about 3 minutes until almost tender. Place in a buttered casserole, set aside.

In saucepan, melt butter; stir in flour until smooth. Whisk in mustard, paprika and half-and-half. Bring to a gentle boil, stirring constantly; simmer 2 minutes. Add salt and pepper. Pour sauce over matchstick potatoes; sprinkle cheese on top.

Bake 350 degrees for 30 minutes, or until potatoes are crisp and golden brown.
