Baked Creamed Matchstick Potatoes

Ingredients

  • 3 Tbsp. butter
  • 4 potatoes, russet or Idaho
  • 3 Tbsp. flour
  • 2 1/4 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1 3/4 cups half-and-half
  • Salt and pepper to taste
  • 2 cups Cheddar cheese, grated

Directions

  1. Peel and wash potatoes, cut into thin slices; cut across slices to make matchstick pieces.

  2. Cook potatoes about 3 minutes until almost tender. Place in a buttered casserole, set aside.

  3. In saucepan, melt butter; stir in flour until smooth. Whisk in mustard, paprika and half-and-half. Bring to a gentle boil, stirring constantly; simmer 2 minutes. Add salt and pepper. Pour sauce over matchstick potatoes; sprinkle cheese on top.

  4. Bake 350 degrees for 30 minutes, or until potatoes are crisp and golden brown.
