Ingredients
- 4 eggs
- 1/3 cup sugar
- 1/4 tsp. salt
- 3 cups milk or half-and-half
- 1 1/2 tsp. vanilla
- Nutmeg or coconut
Directions

Preheat oven to 300 degrees. Butter 6 or 8 custard cups. Pit eggs into large mixer bowl. Beat on high speed- 1 minute. Add sugar and salt. Beat 1 minute longer. Stop mixer, add milk and vanilla.

Beat on low speed until blended. Pour through a fine strainer into custard cups or 1=quart casserole. Sprinkle with nutmeg or coconut.

Set in a shallow pan. Add water to half way up sides. Bake about 1 hour until silver knife inserted in center comes out clean. Cool; chill if desired. Serve with whipped cream, maple syrup or fruit.

Maple Nut Custard: Put 1 Tbsp. maple syrup and a few finely chopped pecans on the bottom of each custard cup. Pour mixture over this.

Rice Custard: Blend 1 cup cooked rice, 1/2 cup raisins into milk mixture, do not strain.
