Baked Custard

Ingredients

  • 2 or 3 eggs
  • 4 Tbsp. sugar
  • 1 cup evaporated milk diluted with 1 cup water or 2 cups milk
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Directions

  1. Scald milk in double boiler.

  2. Beat the eggs slightly, add sugar, salt and vanilla, then the hot milk. Pour into custard cups, set in pan of hot water. and bake slowly in moderate oven (350 degrees) 45 minutes or until firm (when a knife inserted in center comes out clean). Cool before serving.

  3. Peach Custard: Pour custard mix over peach slices or raisins before baking.

  4. Marshmallow Custard: Pour custard mixture over marshmallows in bottom of baking dish.
