Grilled Pineapple Chimichurri Chicken

Ingredients

  • 1/2 small sweet red pepper, seeded
  • 2 slices fresh pineapple
  • 2/3 cup fresh cilantro
  • 2/3 cup fresh parsley
  • 4 tsp lime juice
  • 1/4 cup canola oil
  • 1/4 cup island teriyaki sauce
  • 1 tbsp. minced fresh ginger
  • 4 chicken breast halves
  • 2 green onions, sliced
  • 1/4 cup chopped macadamia nuts, toasted

Directions

  1. On an oiled grill rack, grill pepper and pineapple, covered, over medium heat until lightly browned.

  2. For chimichurri, pulse herbs with lime juice in a food processor until finely chopped. While processing, slowly add oil. Chop grilled pepper and pineapple; stir into herb mixture.

  3. Mix teriyaki sauce and ginger. On oiled grill rack, grill chicken, covered, until done, 5-7 minutes per side, brushing with teriyaki mixture during the last 4 minutes. Brush chicken with the remaining teriyaki mixture before serving. Serve with chimichurri, onions and nuts.
