Baked Custard

Serves 4 people

Ingredients

  • 1 3/4 cups milk
  • 1/4 cup sugar
  • 3 eggs
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • Nutmeg

Directions

  1. Combine all ingredients, except nutmeg, in 4-cup

  2. glass measure; beat well with rotary beater. Pour into four 6 oz. glass custard cups, filling each 3/4 full. Sprinkle with nutmeg.

  3. Microwave for 15 to 16 minutes, on simmer, or until almost set in center. If necessary, remove individual custards as they finish cooking and continue microwaving others until almost set. Let stand 5 minutes before serving.

  4. Variation:

  5. Drain 1 can (16 oz.) peach slices well and divide slices evenly among six 6 oz. custard cups. Pour basic custard recipe over peaches. Increase cooking time 9 to 10 minutes.
