Ingredients
- 1 medium red onion, very thinly sliced
- 1/3 cup white wine vinegar
- 1 Tbsp. sugar
- Salt
- 2 tsp. Dijon mustard
- 2 Tbsp. white balsamic vinegar
- 1/2 tsp. freshly ground black pepper
- 1/4 cup extra virgin olive oil
- 2 1/2 lbs. ripe red, yellow, green and/or orange tomatoes, cut into wedges
- Radish sprouts
Directions

For pickled onions, place onion slices in a medium oven safe bowl. In a small saucepan warm white wine vinegar, sugar and 1/2 tsp. salt over medium heat, stirring occasionally.

For dressing, in a small bowl whisk together mustard, white balsamic vinegar, pepper, and 1/4 tsp. salt. Gradually whisk in olive oil.

Place tomatoes in a large serving bowl. Add dressing; toss to coat. Top with drained pickled onions and radish sprouts.
