Baked Dove Marsala

Ingredients

  • 4 cups uncooked white rice
  • 4 Tbsp. butter
  • 16 dove breasts
  • juice of lemon
  • 1/2 tsp. chopped rosemary
  • salt and pepper
  • 1 lb. whole mushrooms
  • 1 medium onion, chopped
  • 1 1/4 cups Marsala wine

Directions

  1. Saute rice in butter until brown. Layer casserole dish with rice. Cover with dove (breasts up) and

  2. sprinkle with lemon juice, rosemary, salt and pepper. Add mushrooms and onions around breasts. Cover with wine. Bake 30 minutes at 350 degrees until breasts are tender.
