Baked Egg and Cheese Casserole

Ingredients

  • 6 slices white bread
  • 3 Tbsp. soft butter
  • 1/2 cup Romano cheese, grated
  • 1/2 cup sliced stuffed olives
  • 5 eggs
  • 2 cups milk
  • salt and pepper to taste
  • 1 Tbsp. parsley, finely minced

Directions

  1. Trim bread. Toast very lightly. Spread soft butter on toast. Arrange slices in a square, buttered casserole. Sprinkle with half of the grated cheese. Add a layer of sliced olives.

  2. Beat eggs with milk, salt , peppers and parsley. Pour over the bread; sprinkle with remaining cheese and bake in a 350 degree oven for 30 to 40 minutes or until the casserole’s contents are puffed and golden brown.
