Ingredients
- Salt
- 1 whole shad, dressed
- 1 1/2 cup browned bread cubes
- 1/2 cup chopped celery
- 1 Tbsp. chopped green pepper
- 1 Tbsp. minced onion
- Butter or bacon drippings
- Bacon or salt pork, cut in pieces
Directions

Rub salt into fish; cut 3 to 4 gashes in each side of fish. Combine bread cubes, celery, green pepper and onion; add enough melted butter to moisten well.

Stuff fish with bread mixture; secure fish with wooden picks and lace with string. Slip bacon into gashes; place fish in baking pan.

Bake at 375 degrees for 15 to 20 minutes per pound. If desired, baste fish twice during baking with sauce mad of 1 part melted butter and 2 parts water. Bass, bluefish or flounder may be substituted for shad.
