Caramelized Pear and Blue Cheese Quiche

Ingredients

  • 1 deep-dish pastry shell, baked
  • 3 medium firm pears, 2 cored, 1 whole
  • 2 Tbsp. unsalted butter, divided
  • 1 Tbsp. sugar
  • 1/2 cup crumbled blue cheese
  • 6 large eggs
  • 2 cups plain fat-free Greek yogurt
  • 1 cup 2% milk
  • 1/2 tsp. salt
  • 1/4 tsp. ground white pepper
  • 1/8 tsp. ground nutmeg
  • Crumbled blue cheese and/or fresh sage leaves (optional)

Directions

  1. Preheat oven to 325 degrees. Set pastry shell on a baking sheet.

  2. Cut two of the pears into 1/2-inch cubes. Cut remaining pear into thin slices.

  3. In a large skillet melt 1 Tbsp. of the butter over medium-high heat. Add cubed pears and sugar. cook, stirring occasionally, 7 minutes or until lightly browned. Transfer to pastry shell. Sprinkle with blue cheese. Melt remaining 1 Tbsp. butter in skillet. Add pear slices. Cook, stirring occasionally, 3 to 4 minutes or just until softened.

  4. For the custard, in a blender combine eggs, yogurt, milk, salt, pepper and nutmeg. Cover; blend until frothy.

  5. Pour the custard over filling in pastry shell. Arrange pear slices on custard. Bake 1 hour 20 minutes to 1 1/2 hours or just until top is lightly browned and custard is set in center (165 degrees). Cool in pan on a wire rack 40 minutes. Remove pan ring. Cut into wedges, if desired, sprinkle with additional blue cheese and/ or fresh sage leaves.
