Baked Fish Elegante

Ingredients

  • Salt and pepper to taste
  • 1 2lb. red fish
  • Olive oil or salad oil
  • 1 small onion, sliced in rings
  • 1 medium red bell pepper, sliced in rings
  • 1 medium cucumber, sliced in rings
  • 5 Tbsp. butter
  • 1 small can mushrooms
  • 1 Tbsp. minced parsley
  • 1/4 cup fresh lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1/8 tsp. nutmeg
  • 3 eggs, well beaten
  • 1 cup cream or evaporated milk

Directions

  1. Rub salt and pepper into fish; coat fish with oil and lay on baking pan. Put rings of onion, green and red peppers and cucumber around fish; add 1/2 cup hot water.

  2. Bake 50 minutes at 350 degrees.

  3. Heat butter in saucepan; add mushrooms and parsley. Cook for 3 minutes; add lemon juice, Worcestershire sauce and nutmeg.

  4. Combine egg, 3 Tbsp. water and cream; add to mushroom mixture. Cook for 7 minutes over low heat, stirring constantly. Pour over fish and vegetables in serving dish; serve with lemon wedges.
