Baked Fish Elegante

Ingredients
- Salt and pepper to taste
- 1 2lb. red fish
- Olive oil or salad oil
- 1 small onion, sliced in rings
- 1 medium red bell pepper, sliced in rings
- 1 medium cucumber, sliced in rings
- 5 Tbsp. butter
- 1 small can mushrooms
- 1 Tbsp. minced parsley
- 1/4 cup fresh lemon juice
- 1 Tbsp. Worcestershire sauce
- 1/8 tsp. nutmeg
- 3 eggs, well beaten
- 1 cup cream or evaporated milk

Rub salt and pepper into fish; coat fish with oil and lay on baking pan. Put rings of onion, green and red peppers and cucumber around fish; add 1/2 cup hot water.

Bake 50 minutes at 350 degrees.

Heat butter in saucepan; add mushrooms and parsley. Cook for 3 minutes; add lemon juice, Worcestershire sauce and nutmeg.

Combine egg, 3 Tbsp. water and cream; add to mushroom mixture. Cook for 7 minutes over low heat, stirring constantly. Pour over fish and vegetables in serving dish; serve with lemon wedges.
