Baked Fish Fillets, Spanish Style

Almost any type fish fillet will work with this recipe.

Ingredients
- 1 cup finely chopped onion
- 1/3 cup butter or margarine
- 1 clove garlic, minced
- 1/2 cup chopped celery
- 1 can (15 oz.) mild Ro-Tel (tomatoes, onions, celery and green peppers)
- 1/8 tsp. ground cloves
- 1 bay leaf
- 1 1/2 cups finely shredded carrots
- 3/4 cup chicken broth
- Salt and freshly ground black pepper
- 2 lb. frozen fish fillets (flounder, perch, Greenland turbot), thawed
- Fresh chopped parsley

Saute onion in the butter in heavy saucepan until tender but not browned.

Add garlic and celery and saute until tender. Add Ro-Tel, cloves, bay leaf, carrots, chicken broth, 1/2 tsp. salt and pepper to taste. Cover and simmer about 30 minutes.

Grease a shallow 2- quart baking dish. Sprinkle thawed fillets lightly with salt and pepper. Roll up and secure with toothpick.

Arrange in baking dish. Pour sauce over and around fish and bake in preheated 350 degree oven 35 minutes. or until fish flakes easily with fork. Sprinkle with chopped parsley.
