Baked Fish with Stuffing

Ingredients

  • 3 to 4 lb. fish
  • Salt and pepper
  • 2 cups soft bread crumbs
  • 1 cup celery
  • 2 Tbsp. minced onion
  • 1 Tbsp. minced parsley
  • 4 Tbsp. butter
  • 1/2 cup hot water
  • 2 Tbsp. lemon juice
  • Paprika

Directions

  1. Remove fish bones. Wipe with damp cloth to remove scales.

  2. Rub inside and out with salt and pepper. Stuff with stuffing made of crumbs, celery, onion. parsley, butter and hot water. Fasten with thread skewer or toothpicks. Place in pan lined with foil.

  3. Add 1 cup water. Sprinkle with salt and rub with soft butter and lemon juice. Sprinkle with paprika.

  4. Bake 1 hour and 30 minutes or 20 minutes per pound at 375 degrees.
