Ingredients
- 2 tbsp. olive oil, divided
- 1/2 tsp ground coriander
- 1/2 tsp salt, divided
- 1/2 tsp black pepper, divided
- 4 chicken breasts or cutlets, trimmed
- 1/2 cup finely diced and seeded cucumber
- 1/2 cup finely diced radishes
- 1/4 cup finely chopped fresh mint
- 2 tsp rice vinegar
Directions

Preheat grill to medium-high.

Combine 1 tbsp. oil, coriander and 1/4 tsp each salt and pepper in a small bowl. Brush on both sides of chicken.

Grill the chicken, turning once, until done, 8-10 minutes total.

Meanwhile, combine cucumber, radishes, mint and vinegar in a medium bowl with the remaining 1 tbsp. oil and 1/4 tsp each salt and pepper. Serve with the chicken.
