Ingredients
- 1 medium onion, thinly sliced
- 1 bay leaf, crumbled
- Pinch of thyme
- 1 1/2 lb. flounder fillets
- 1/2 cup whole almonds
- 6 Tbsp. soft butter or margarine
- Grated peel of lemon
- 3/4 tsp. paprika
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

In bottom of greased shallow baking dish, place onion slices, bay leaf and thyme; place fillets on top of seasonings.

Blanch almonds in boiling water; remove skins. Chop coarsely and mix with soft butter. Add remaining ingredients to almond mixture; spoon over fish.

Bake at 350 degrees for 20 to 25 minutes or until fish flakes easily when tested with fork.
