Baked Georgia White Shrimp with Parsley, Garlic and Potato Flakes

Ingredients
- 1 /12 lb. medium white shrimp, peeled and deveined
- 1 1/4 cups extra-virgin olive oil
- 3/4 cup chopped fresh parsley
- 5 garlic cloves
- 1 tsp. dried oregano
- Salt and freshly ground pepper to taste
- 1/3 cup fresh lemon juice
- 1 cup instant potato flakes
- 1 lemon, cut into 6 wedges, for garnish
- Parsley sprigs, for garnish

Preheat the oven to 375 degree. Place the shrimp in a baking dish or casserole and set aside.

Combine 1 cup of the olive oil with the parsley, garlic and oregano in a food processor and process until finely chopped. Add the salt and pepper and lemon juice and process until smooth. Pour this mixture over the shrimp, toss to coat, and marinate for 10 to 15 minutes.

Pour the potato flakes onto a plate. Roll the shrimp I the [potato flakes to coat, then place the shrimp on a baking sheet. Drizzle with the remaining 1/4 cup olive oil and bake for 6 to 8 minutes, until the flakes are golden. Evenly divide the shrimp on individual serving plates. Garnish with a lemon wedge and parsley, and serve immediately.
