Baked Halibut with Cheese Sauce

Ingredients

  • 2 halibut fillets (1 1/2 lbs.)
  • 1/2 tsp. butter or margarine
  • 1/4 lb. grated cheddar cheese
  • 1 egg, well-beaten
  • 1 1/2 tsp. salt, divided
  • 1/4 tsp. pepper, divided
  • 1/4 tsp. dry mustard
  • 1 cup milk
  • 4 sprigs parsley

Directions

  1. Put halibut fillets I greased baking pan. Sprinkle with 1 tsp. of the salt, 1/8 tsp pepper, and 1/2 tsp. melted butter.

  2. Bake in very hot 450 degree oven until fish can be flaked with a fork.

  3. Mix grated cheese, beaten egg, dry mustard, 1/2 tsp salt, and 1/8 tsp. pepper. Scald milk and slowly stir it into cheese mixture. Then cook this slowly in double boiler until smooth, thick sauce is made.

  4. Put fish on warm platter; pour on cheese sauce and garnish with parsley. Serve immediately.
