Baked Macaroni and Cheese

Ingredients

  • 1 Tbsp. margarine
  • 3 Tbsp. all-purpose flour
  • 2 cups skim milk
  • 3/4 to 1 tsp. dried marjoram
  • 1/2 tsp. dried thyme
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. paprika
  • 1 Tbsp. Dijon mustard
  • 1/2 cup grated Parmesan cheese, divided use
  • 1 (7 oz.) box elbow macaroni, cooked and drained
  • 1 cup low-fat cottage cheese

Directions

  1. Melt margarine in a large saucepan. Add flour and stir to form a smooth paste. Gradually add milk, stirring constantly. Bring to a boil; boil 1 minute or until thickened.

  2. Add marjoram, thyme, nutmeg and paprika; stir in mustard and 1/3 cup of the Parmesan cheese; mix well.

  3. Add macaroni and cottage cheese; toss to coat. Pour into an 8-inch square baking dish sprayed with nonstick cooking spray. Sprinkle with remaining Parmesan.

  4. Bake , uncovered, at 350 degrees for 30 minutes, or until heated through and top is golden. brown.
