Ingredients
- 1 cup dry converted white rice
- 1 avocado, pureed
- 1/4 cup minced fresh cilantro
- 1/4 cup scallions
- 1-2 tbsp. minced serrano chile or jalapeno
- 1 tbsp. olive oil
- 1 tbsp. white wine vinegar
- Salt to taste
Directions

Cook rice as directed.

Stir in avocado, cilantro, scallions, serrano, oil, and vinegar. Season rice with salt.
