Ingredients
- 1/2 lb. orzo
- 3 Tbsp. unsalted butter
- 3 Tbsp. all-purpose flour
- 3 cups whole milk, heated
- 5 oz. extra-sharp cheddar, grated
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground pepper
- 1/4 cups fresh bread crumbs
- 1/4 cups grated Parmesan cheese
Directions

Preheat oven to 375 degrees. Lightly grease a 9 × 11 inch baking dish.

Prepare orzo according to package directions, until not quite al dente. Drain.

Meanwhile, in a large saucepan over medium-low heat melt butter. Whisk in flour and cook, stirring constantly, for about 3 minutes.

Increase heat to medium-high, slowly whisk in milk and cook, stirring constantly, until mixture comes to a boil. Reduce heat to low and cook, whisking often, for 5 minutes. Remove from the heat and stir in the cheddar cheese. Season with salt and pepper.

Stir orzo into sauce and transfer to baking dish. Combine bread crumbs and {Parmesan cheese and sprinkle over orzo. Bake for 15 to 20 minutes, or until bubbly and lightly browned on top.
