Ingredients
- 4 cups diced Italian bread
- 4 tbsp. olive oil, divided
- Salt and black pepper to taste
- 1 cup mayo
- 1/2 cup grated Parmesan
- 1/2 cup chopped fresh parsley
- 1/4 cup fresh lemon juice
- 2 tsp minced fresh garlic
- 2 tsp anchovy paste
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1 bag coleslaw mix
Directions

Toss bread with 2 tbsp. oil and season with salt and pepper. Heat a large nonstick skillet over medium. Add bread and cook until toasted, stirring often, 5 minutes.

Whisk together mayo, Parmesan, parsley, lemon juice, remaining 2 tbsp. oil, garlic, anchovy paste, 3/4 tsp salt and 1/2 tsp pepper for the dressing.

Combine coleslaw mix with dressing. Serve coleslaw with croutons.
