Ingredients
- 1 lb. carrots, grated
- 1/4 cup fresh orange juice
- 2 tbsp. fresh lemon juice
- 1 tbsp. sliced fresh mint
- 6 tbsp. olive oil
- 1 1/2 cups panko
- 2 tbsp. za'atar seasoning
- 2 chicken breasts, halved horizontally
- 1 egg, beaten
Directions

In bowl, toss first 4 ingredients with 2 tbsp. oil; season. In another bowl, mix panko and za’atar. Coat chicken in egg, then panko. In skillet, fry in remaining oil over medium-high, 5 minutes per side.
