Baked Ricotta Pie

Ingredients

  • Olive oil
  • 4 sliced bacon, diced, optional
  • 1 small onion, very thinly sliced
  • 2 cups ricotta cheese
  • 5 eggs
  • 1 cup sour cream or crème fraiche
  • Salt and ground black pepper
  • 1 roasted red bell pepper, cut into thin strips
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Heat oven to 400 degrees. Generously coat a deep pie plate with olive oil.

  2. In a medium skillet, cook bacon (if using) and onion until crisped and browned. Drain on paper towels.

  3. In a mixing bowl, beat the Bake 20 to 25 minutes or until mixture is set but slightly wobbly in the center. Let stand 10 minutes before serving.
