Chipotle- Pineapple Pork Skewers

Ingredients

  • 1/4 cup pineapple juice
  • 1/4 cup Heinz 57 Sauce
  • 1 canned chipotle pepper in adobo sauce, finely chopped
  • 1 lb. pork tenderloin, trimmed, cut into 1 1/2 inch pieces
  • 1 cup fresh pineapple chunks (1-inch)
  • 16 fresh mushrooms
  • 1 poblano chile, cut into 1-inch pieces
  • 1/2 red onion, cut into 1-inch chunks

Directions

  1. Heat grill to medium-high heat.

  2. Mix first 3 ingredients alternately onto 4 skewers.

  3. Grill skewers 12 to 15 minutes or until meat is done (145 degrees), turning and brushing occasionally with pineapple sauce mixture.

  4. Remove skewers from grill. Let stand 3 minutes before serving.
