Frozen Watermelon Pie

Ingredients

  • 1/4 cup boiling water
  • 1 pkg. (3 oz.) Jell-O Watermelon flavor gelatin
  • 1/4 cup fresh lime juice
  • 1 tub (8 oz.) Cool Whip whipped topping, thawed, divided
  • 2 cups seedless watermelon cubes (1/2 inch)
  • 1 ready-to-use graham cracker crumb crust (6 oz.)
  • 2 kiwis

Directions

  1. Add boiling water to gelatin mix in large bowl; stir 2 minutes until completely dissolved. Add lime juice and 2 cups Cool Whip/ Stir with whisk until blended. Stir in watermelon.

  2. Spoon into crust.

  3. Freeze 4 hours or until firm. let stand at room temperature 10 minutes, before serving. Meanwhile, peel kiwis. Cut into slices, then cut each slice in half. Garnish pie with remaining Cool Whip and kiwi before serving.
