Orzo and Olive Salad with Spiced Citrus Vinaigrette

Ingredients
- 1 1/2 cups dried whole wheat or regular orzo pasta
- 1/2 cup orange juice
- 1/4 cup snipped fresh mint
- 1/4 cup lemon juice
- 2 Tbsp. honey
- 1 Tbsp. olive oil
- 1 tsp. ground coriander
- 1 tsp. grated fresh ginger
- 1/2 tsp. salt
- 1/4 tsp. ground turmeric
- 1/4 tsp. crushed red pepper
- 2 cups lightly packed fresh arugula
- 1 cup julienne carrots
- 3/4 cup thinly sliced green onions
- 1/2 cup pitted green olives, halved
- 1/2 cup golden raisins
Directions

Cook orzo according to package directions; drain. Rinse with cold water; drain again.

Meanwhile, in a large bowl whisk together orange juice, mint, lemon juice, honey, oil, coriander, ginger, salt, turmeric, and crushed red pepper. Stir in orzo, arugula, carrots, green onions, olives and raisins. Cover and chill 2 to 24 hours.
