Baked Cheese and Cornmeal Pudding

Ingredients

  • 2 cups scalded milk
  • 1/2 cup yellow cornmeal
  • 1 tsp. salt
  • 1/4 cup butter
  • 1 1/2 cups grated cheddar or Swiss cheese
  • 1 tsp. paprika
  • 8 thin slices bacon, cooked
  • 1 cup tomato sauce

Directions

  1. Sprinkle cornmeal into the scalded milk and stir constantly over a low heat until the mixture thickens. Add salt and cook for 15 minutes, stirring frequently.

  2. Remove from heat, add butter and 1/2 cup of the cheese. Stir until well mixed, pour into a buttered 8-inch square pan and let cool.

  3. When cold, spread with the rest of the grated cheese, sprinkle with the paprika and bake in a moderate oven (350 degrees) until the cheese is melted and lightly browned. Place the cooked bacon on top of the cheese and serve hot with tomato sauce as a main dish. Cut in squares for serving.
