Baked Stuffed Eggplant

Ingredients

  • 1 medium eggplant
  • 1/2 lb. ground beef
  • 1 medium tomato, peeled and chopped
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped celery
  • 1/2 cup cooked regular rice
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. dried whole basil
  • Dash pepper
  • 1/2 cup (2 oz.) shredded Cheddar cheese

Directions

  1. Wash eggplant, and cut in half lengthwise. Remove pulp, leaving a 1/4-inch shell; set shells aside. Dice pulp, and set aside.

  2. Cook ground beef in a large skillet over medium heat until browned. Add eggplant pulp, tomato, onion, green pepper, and celery. Cook 5 minutes, stirring occasionally. Remove from heat; stir in rice, salt, basil and pepper.

  3. Place eggplant shells in a 10 × 6 × 2-inch baking dish. Spoon meat mixture into shells; sprinkle Cheddar cheese on each eggplant half. Bake at 350 degrees for 30 minutes.
